MacBook recovery after Trash was emptied

Hi,
I was told by a data recovery company that after you empty the trash on a Mac, there's a process called trim that automatically writes zeros over the sectors so data is not recoverable. Is R-Studio T80+ for Mac or R-Undelete tools that could help to recover these files?
It sounds like with R-Studio T80+ I can run the program from a USB stick (I don't want to install anything on the the MacBook's drive at this time) - is this possible?
