Targeting Folders

What is the best/fastest way to target deleted folders and their contents (files and subfolders)?

For example, a hard drive was being used and had an OS installed, has apps installed and data, etc. The hard drive is subsequently formatted and a new copy of the OS installed.

Now, I want to go and target a known directory that use to reside on the hard drive and get it's contents. It's contents contain proprietary format files so they would not be found as Known file types.

Is there a good way to target this type of recovery so I can save time and focus on just what I want?

also note that files names and folders names and directories tree may not being recoverable, it all depends on what has been overwritten and on which was the first filesystem and the new one that has overwritten the first one.
