If you already have the scan info for the RAID, you don't have to rescan it. Just load it.
R-Studio's on-line help: Disk Scan. Just set the Size to app. 90% of the RAID size.

Alt, I was experiencing something similar when I was trying to recover my raid 5. If the underlying FS had LVM, could it cause this behavior?

It's a possibility, R-Studio doesn't support LVM yet.

I was able to successfully complete to 100%. Next big question...which version do I buy now? I am restoring to USB drives that are attached to the computer that has R-Studio installed on it.

First and most important, thoroughly test the results by previewing files, and buy R-Studio only if you're satisfied with the results.
Second, I think, R-Studio will be enough.
