The scan of my 1GB HDD took several hours. Is there any way to save somewhere all the data R-studio has gathered during this process and be able to get back to undeleting files right from the point I am going to stop it now? I am going out and I need to get my laptop and first I have to disconnect SATA drive that is being recovered. I don't want to waste another night for the R-studio to analyze the disk again, when I am back home and can reconnect everything again. Any suggestion? Am I missing some option?

Yes, you can stop scan, save the results, and then resume scanning. See online help:
